Black Beans

In Latin America, the black bean is already considered a staple food, but it remains relatively unknown here. However, it is one of the oldest food sources, having been part of the diet in North, South, and Central America for over 7,000 years. Since 2021, you can find it at Schalk Mühle and selected specialty markets, all with 100% Austrian organic origin.

The black legumes are particularly popular due to their creamy, meaty texture and strong flavor. Many people even use the cooking water of the beans as a seasoning broth or soup base, as it is rich in aromatic compounds. Therefore, it’s wise to be cautious when adding additional seasoning!

Task

The black color of the beans is due to the presence of anthocyanins (natural plant pigments), which are found in the seed coat.
