Green Lentils

Green lentils, often called Puy lentils, are quite small, with a diameter of just 3 to 4 mm. Their outer shell is marked by a unique dark green, blue, and brown marbling, while the interior is yellow. However, this beautiful marbling fades during cooking. Known for their nutty-spicy flavor and firm bite, green lentils are much less starchy than other varieties and retain a delightful firmness even at the core.
