Mustard

Mustard has a rich history, valued not only for its culinary appeal but also for its healing properties. From the start, the sharp spice and oil of mustard have been applied across a wide range of uses. Initially known in Asia, mustard cultivation later spread to Europe through Greece. Today, mustard is grown in various regions, including Austria, and has become a staple in kitchens everywhere.

Visually, mustard is hard to distinguish from rapeseed. However, one of the easiest ways to tell them apart is by bloom time: rapeseed flowers in late spring (April & May), while mustard blooms from early summer onward.
