Safflower

The safflower is incredibly low-maintenance and grows quickly. The Romans already used its plant extracts as dye for clothing, while in Asia, it has long been prized for its seeds, which are used to make oil. Here, safflower is gaining popularity and may soon shed its status as a niche product.

 

Task

Though the safflower plant is one of the thornier oilseeds, we still love it, and the oil offers a wonderfully mild flavor.
