They grow predominantly in rather mountainous regions, hence their name. Legumes like mountain lentils are considered particularly beneficial for the soil, as they naturally supply it with nitrogen, thus offering significant added value, especially in organic farming. These relatively firm-cooking, sweet and spicy lentils are suitable for salads, as a side dish, and in soups.
