A very simple recipe for pancakes that are free from gluten, dairy, and refined sugar. The egg binder is replaced by a banana, which provides valuable potassium. The browner the banana peel, the more antioxidants it contains and the sweeter the pancakes will be.
At first, you might wonder how pancakes with only three ingredients could work, especially vegan ones, but this recipe is the perfect example of how delicious and simple purely plant-based dishes can be.
As an alternative to banana, you can also try it with applesauce or, for a savory version, with pumpkin.
Ingredients for 1 serving of vegan pancakes
- 50 ml plant-based milk (oat or spelt work well)
- 50 g rolled oats
- 1 medium banana (approx. 90 g peeled)
- 1 pinch of salt
- Cinnamon, optional chocolate chips
For the pancakes in the photo, 20 g of Schalkolade protein powder mix was added for increased protein content, a dark color, and the fine taste of cocoa.
Preparation
- Mix all ingredients with a hand blender
- Grease a pan very well (vegetable oil; coconut oil works very well)
- Pour the pancake batter into the hot pan (medium heat) and as soon as they are cooked enough to slide a spatula underneath without breaking them, flip them and fry for another minute.
- 1 serving makes about 4-6 small pancakes, which are particularly tasty when combined with fruit
