These No Bake Gingerbread Trees are the perfect healthy alternative to classic Christmas cookies. With Medjool dates, walnuts, pumpkin seed protein and aromatic gingerbread spice, you can whip up a vegan Christmas snack in no time at all—without needing an oven. Naturally sweetened, rich in plant-based protein and full of wintery flavours—ideal for anyone who wants to enjoy the Advent season mindfully. Ingredients: – 150 g Medjool dates
– 100 g ground walnuts
– 50 g organic raw pumpkin seed protein powder
– 1 tsp (heaped) gingerbread spice (e.g. from Sonnentor)
Preparation:
Tear the dates into rough pieces and add them to the blender with the other ingredients. Gently shake or tap the blender jug so the dry ingredients mix with the dates, then blend everything into a sticky mixture.
Press the dough into a festive silicone mould and place it in the freezer for at least 1 hour.
Press the snacks out of the silicone mould and serve, or freeze again for later. Optionally decorate with chocolate.
