These fruity-fresh Berry Protein Tarts are the perfect healthy snack for hot days – no baking required! With a creamy filling of blueberries, Multi Berry Protein Mix, and psyllium husks, and a sweet base of cashews and dates, they are not only vegan and gluten-free but also rich in plant-based protein and fiber. Sweetened exclusively with dates and date sugar – ideal for a conscious, natural diet. Whether as a cooling summer treat or a healthy dessert: these small cakes impress with their taste and nutritional value. The recipe yields 26 servings/cups. Dough Ingredients: – 300 g cashews – 300 g Sukkary dates – 2 tbsp sweet lupine flour – 1 tbsp “Alles Liebe” spice blend by SonnentorFilling Ingredients: – 400 g fresh blueberries – 80 g Multi Berry Protein Mix – 80 g date sugar – 2 tbsp psyllium husksPreparation:
Roughly blend cashews; add other dough ingredients and blend into a sticky mass
Divide the dough among the 26 cups and line the cups using baking paper and a shot glass
Blend all ingredients for the filling
Fill the dough cups with the blueberry mixture
Decorate with fresh blueberries as a topping
Freeze for at least 2 hours
To serve, press the tarts out of the mold and let them thaw completely
Offer spoons for consumption
