Cut the pumpkin flesh into approximately 1 cm cubes and slice the onion into rings. Then layer the pumpkin flesh and onion alternately in a bowl. Add some soy sauce and olive oil to each layer and refrigerate overnight.
The next day, bring water to a boil in a pot, add some salt and the pumpkin flesh. Let it simmer for approximately 10 minutes.
Heat some sunflower seed oil in a pan and lightly fry the pumpkin flesh.
Finally, place all ingredients (pumpkin flesh, sauce, salad) in the bread and top with pumpkin seeds. You can also serve the pumpkin seeds on the side for snacking.
