These delicious “Green Cookies” are not only gluten-free but also an excellent source of plant-based protein. Thanks to our hemp nut protein, they have a nutty note and provide valuable nutrients – perfect for a conscious diet!

Ingredients:

• 1 tbsp ground flaxseeds
• 2 tbsp warm water
• 80 g soft margarine
• 80 g coconut sugar
• 100 g gluten-free cookie flour (e.g., Schär Mix C)
• 1 tsp baking powder
• 50 g hemp nut protein powder
• Orange zest
• 100 g ground blanched almonds
• 20 g coconut chips
• (Optional: dark chocolate)

Preparation:

1. Mix the flaxseeds with warm water and let them soak for 10 minutes.
2. Beat the margarine and coconut sugar until creamy.
3. In a bowl, combine the flour, baking powder, hemp nut protein, orange zest, and almonds.
4. Add this mixture along with the flaxseed mixture to the margarine and sugar mixture and knead together.
5. Knead in the coconut chips (and dark chocolate, if using).
6. Form small cookies using a teaspoon and place them on a baking tray.
7. Bake at 180°C (top/bottom heat) for about 10 minutes until the edges are lightly browned.

Tip: These cookies don’t just taste great fresh from the oven, they also stay wonderful for a few days – if they last that long! 😉
