A look back reveals that mustard is not only a culinary delight but also possesses healing properties. Accordingly, the applications of this pungent spice and its oil were very broad from the outset. Initially known more in the Asian region, mustard cultivation then spread to Europe via Greece. Today, mustard is found in various regions, including Austria, and has become an indispensable part of the kitchen.

Mustard is visually difficult to distinguish from rapeseed. However, one of the easiest distinguishing features is the flowering period: rapeseed blooms in late spring (April & May), while mustard blooms at the earliest in summer.
