White Bean

(Phaseolus vulgaris)

So small, yet so popular: white beans. Among connoisseurs, they are considered a perfect addition to a healthy diet, as they are rich in satiating fiber, iron, and magnesium. The latter is also said to promote strong nerves – which are always useful!

Originally, the white bean comes from the tropics and subtropics of Central and South America, especially from the area around South and West Mexico. In terms of taste, they are rather slightly sweet and, when cooked or soaked, have a pleasantly soft, floury consistency. The British swear by their white beans for breakfast (“baked beans”), and they are also popular in our regions in stews and salads.
