Potato salad with mustard oil dressing
Potato salad is always a favorite – but this potato salad with mustard oil dressing takes the classic recipe to a whole new level! With new potatoes, tangy Dijon mustard, apple cider vinegar, and the fine aroma of Organic Virgin Mustard Oil, the result is a salad that is hearty, refreshing, and light all at once. The outcome: an aromatic potato salad that pairs perfectly with any BBQ, veggie dishes, or simply as a summery main course. Ingredients for 4 servings
1 kg new potatoes or salad potatoes
Water for boiling
Dressing
150 ml water
1 tsp organic vegetable broth (according to instructions)
2 tbsp organic apple cider vinegar
2 tsp Dijon mustard (if you like it spicier, you can use more…)
3 tbsp Organic Virgin Mustard Oil
1 medium onion
1 clove of garlic
Salt and pepper
Chives
Preparation
Place the potatoes in a large pot and cover with water. Bring to a boil and cook for approx. 20–25 minutes depending on the size of the potatoes, then drain.
In the meantime, prepare the dressing: boil 150 ml of water in a small pot and stir in the vegetable broth. You can then turn off the stove immediately.
Now add the apple cider vinegar, Dijon mustard (you can of course choose another type of mustard), and the Organic Virgin Mustard Oil, and mix everything together.
Finely chop the onion and garlic clove or cut them into thin slices and stir them into the dressing.
Now transfer the dressing from the pot into a larger salad bowl.
Peel the potatoes while they are still warm and slice them directly into the dressing. Mix the entire salad well with the dressing and season to taste with salt and pepper.
If you like, you can add chives as desired – it also adds a nice touch of color!
Tip
It is best to let the potato salad sit for one to two hours.
