Banana Bread Cookies

These Banana Bread Cookies combine everything we love about classic banana bread – just in a handy cookie form! With very ripe bananas, tigernuts, chia seeds and Schalkolade Protein, you get vegan, gluten-free cookies that are naturally sweet, moist and wonderfully aromatic. Thanks to the gentle preparation in the dehydrator, valuable nutrients are retained – ideal for anyone who wants to snack mindfully. Ingredients:
– 3 very ripe bananas – 1 tbsp organic chia seeds – 100 g ground tigernuts – half an apple, grated (approx. 100 g) – 1 tsp gingerbread spice (e.g. from Sonnentor) – 35 g organic Schalkolade Protein Mix (or alternatively organic raw flaxseed protein powder) optional:
– 30 g walnuts, chopped – 30 g raisins For the topping:
– almond butter – grated vegan chocolate – fruit (banana, apple, berries) Preparation:

Cut the bananas into rough pieces, add the gingerbread spice and mash with a potato masher.
Add the remaining ingredients and mix well with a spoon.
Portion the cookies onto a dehydrator sheet, press flat to about 1 cm and make small indentations with the spoon.
Dehydrate for 10 h in the dehydrator at 40°C. After about 4–5 h, turn the cookies over and remove the sheet.
Best served warm straight away with toppings of your choice, and enjoy.
