Many thanks to Laura and Viktoria @joppalchippal for this great recipe 🙂Ingredients for burger buns: (4 people)
1 tbsp ground flaxseeds
2 tbsp water
100 ml lukewarm water
15 ml lukewarm oat milk
1/4 cube yeast
1 pinch coconut blossom sugar
200 g whole grain spelt flour
25 g raw organic aronia powder
1/2 tsp salt
20 ml olive oil
also:
some oat milkPreparation of burger buns:
First, mix the ground flaxseeds and the 2 tbsp of water (flaxseed egg) and let them soak.
Meanwhile, mix the lukewarm water and the lukewarm oat milk and dissolve the yeast in it together with the coconut blossom sugar.
Now mix the flour, aronia powder, and salt in a large bowl, add the flaxseed egg, the yeast mixture, and the oil, and knead into a smooth dough.
Cover the dough bowl with a tea towel and let it rise in a warm place for about 60 minutes.
Then knead the dough again by hand. After that, divide the dough into 4 equal pieces and shape them into hearts. Place these on a baking tray and brush with some oat milk. The buns need to rest there for another 20 minutes. Meanwhile, preheat the oven to 190 degrees convection.
The buns are then baked for about 15 minutes.
Ingredients for red bean patties:
80 g onion
1 small garlic clove
125 g red beans (dry weight)
80 g oat flakes, lightly ground (alternatively 60 g oat flakes + 20 g flour)
1 tbsp mustard
1 tbsp tomato paste
1 tbsp soy sauce
1 tsp olive oil
1 tsp paprika powder
1/2 tsp salt
Pepper
further items for your burger:
organic walnut pesto
Vegetables of your choice (e.g., lettuce, tomatoes, and onion)Preparation of red bean patties:
Soak the red beans (ideally the day before), discard the soaking water the next day, and cook the beans for approx. 45–60 minutes (depending on desired firmness).
Finely dice the onion and sauté briefly in a pan with a little oil. Press the garlic clove using a garlic press and sauté briefly in the pan.
Mash the red beans with a fork or coarsely chop them in a high-performance blender.
In a bowl, mix the mashed beans, the sautéed onions and garlic, and the remaining ingredients well, then refrigerate the burger patty mixture for at least 30 minutes.
Divide the mixture into 4 pieces and shape into heart patties.
Fry the burger patties in a pan with oil over medium heat for about 5 minutes on each side.
Assemble your burger as desired, spread with walnut pesto, and enjoy.
