Every year, the same again… Oh yes, Christmas is just around the corner—and what must not be missing? Exactly: homemade Christmas cookies! And the lovely
scheuxn has conjured up something truly delicious for us: vegan, protein-rich “pumpkin seed cookies” with only very little sugar. This recipe is super easy and a healthy alternative for Christmas baking—so it’s time to enjoy without regrets! Thank you so much, dear Oliver!
Ingredients for vegan shortcrust pastry
- 280 g wholegrain spelt flour
- 100 g organic pumpkin seed protein, raw or roasted
- 190 g vegan margarine
- 1 packet vegan vanilla sugar
- 60 g birch sugar
Also
- Vegan dark chocolate
- 1 tsp Schalkolade Protein Mix
Preparation
- Mix all ingredients into a smooth dough.
- Chill the dough and let it rest for half an hour.
- Preheat the oven to 175–180°C (top/bottom heat).
- Shape the cookies as desired and bake in the oven for 12–15 minutes.
- Melt the vegan dark chocolate in a bain-marie and mix with 1 tsp Schalkolade.
- Then, as you like, brush the baked cookies with it, decorate them, or simply dip them into the Schalkolade mixture.
Tip:
The cookies are also ideal as a gift—simply make a hole through the cookies and attach a string for hanging.
