Safflower

(Carthamus tinctorius)

Safflower is very easy to care for and grows very quickly. The Romans already used the plant extracts as a dye for clothing, and in Asia it has always been known for its seeds, from which the oil was made. Safflower is becoming increasingly popular here and will probably not be considered a mere niche product for much longer.

Safflower is probably one of the pricklier oilseed plants. We still like it, and the oil tastes wonderfully mild.
