In summer, Nele’s dishes must meet three criteria: 1. healthy, 2. light, and 3. high in protein. A couscous salad with legumes meets every single one! The lovely @nele.sicher has created the perfect protein boost for you:   Ingredients for 2 people

• 300g couscous
• 2 giant tomatoes
• 1/2 cucumber
• 2 carrots
• 1 bell pepper
• 1 pkg. organic scarlet runner beans
• 1 pkg. organic mountain lentils
• 100 ml vinegar
• 2 tbsp organic virgin linseed oil
• 1/2 lemon (juice)
• Basil
• Parsley
• Salt
• Pepper
• Chili

  Preparation

1. I soaked the beans in water the night before so that they would be easy to cook the next day.
2. Couscous can be prepared in various ways. I prefer the low-effort version. That is why I boil water and pour the couscous and water into a bowl at a 1:1 ratio. Then I wait until the couscous is soft. At the same time, I also boil the beans and lentils in water for about 20 minutes.
3. Meanwhile, cut the vegetables into small pieces, add the legumes and couscous, and season to taste with herbs and spices.

  The great thing is: the summer salad still tastes good when stored, if not even better.
