Ingredients for 2 people
- 300g couscous
- 2 giant tomatoes
- 1/2 cucumber
- 2 carrots
- 1 bell pepper
- 1 pkg. organic scarlet runner beans
- 1 pkg. organic mountain lentils
- 100 ml vinegar
- 2 tbsp organic virgin linseed oil
- 1/2 lemon (juice)
- Basil
- Parsley
- Salt
- Pepper
- Chili
Preparation
- I soaked the beans in water the night before so that they would be easy to cook the next day.
- Couscous can be prepared in various ways. I prefer the low-effort version. That is why I boil water and pour the couscous and water into a bowl at a 1:1 ratio. Then I wait until the couscous is soft. At the same time, I also boil the beans and lentils in water for about 20 minutes.
- Meanwhile, cut the vegetables into small pieces, add the legumes and couscous, and season to taste with herbs and spices.
The great thing is: the summer salad still tastes good when stored, if not even better.
